Grading System of Wagyu

The fat is so well-distributed that it gives the meat a distinctive “snowflake” pattern when sliced. The A5 and A4 ratings are not just based on marbling alone. They also take into account the meat’s overall appearance, color, firmness, and fat quality. Only beef that meets strict criteria in all of these areas can be classified as A5 and A4 rank wagyu.
